Description

Shan Bombay Biryani Masala is the recipe mix for Bombay (Mumbai-style) biryani: layered rice and meat cooked with potatoes and tomatoes on a tangy base of dried plum, fenugreek and dill. One 60 g pack seasons about 1 kg of meat or chicken with 1 kg of rice and serves 8.

What is in the pack

Salt, red chilli, dried plum, fenugreek seed, dill seed, turmeric, cinnamon, black pepper, cumin, nigella, bay leaf, fennel, brown cardamom, ginger, garlic, clove, dried papaya powder, maltodextrin, hydrolysed soy protein, citric acid, sugar, canola oil, flavouring and anti-caking agent. Check the pack for allergen advice. The full recipe is printed inside the pack in several languages.

How to cook Bombay biryani with it

  1. Fry 2–3 sliced onions in hot oil until golden. Add 3–4 chopped tomatoes and fry until the oil separates.
  2. Add 1 kg meat or chicken, 1 tablespoon each garlic and ginger paste, 1 cup yogurt, 3–4 halved potatoes and the whole pack of Shan Bombay Biryani mix. Stir-fry for 10 minutes.
  3. Add water (4 cups for beef or mutton, 2 cups for chicken). Cover and cook on low heat until the meat is tender and the gravy is thick.
  4. Boil 1 kg basmati rice until three-quarters done and drain. Layer half the rice in a pot, spread the meat over it, top with the remaining rice. Cover tightly and cook on low heat for 5–10 minutes. Mix gently before serving.

Questions & answers

Is this the original Shan Bombay Biryani Masala?

Yes. It is the imported Shan Foods (Karachi) pack, factory-sealed and never repacked. Prices include GST and every order gets a GST invoice.

How many people does one 60 g pack serve?

About 8 people, cooked with 1 kg of meat or chicken and 1 kg of rice.

What is the difference between Shan Bombay Biryani and Shan Biryani Masala?

Bombay Biryani is the tangier Mumbai style with potatoes, dried plum and fenugreek. Shan Biryani Masala is the plainer all-purpose biryani mix, and Shan Sindhi Biryani is the spiciest of the three.

Can I make chicken Bombay biryani with it?

Yes. Use 2 cups of water instead of 4 and cook until the chicken is tender, then layer with the rice as usual.
